Guy Carmeli didn’t begin his career in a kitchen, but his passion for food and entrepreneurship eventually led him there—and to founding Pasta di Guy. After starting out in computer science, he made a decisive pivot toward the calling that had followed him since childhood. Inspired by his grandmother’s cooking and hospitality, Guy was drawn to kitchens from an early age, often watching chefs at work and imagining his own future in the industry.

That passion led him into an Italian restaurant, where he quickly advanced to sous chef and later pursued formal training at Le Cordon Bleu in Europe, earning the prestigious Grand Diplôme. He went on to work in Michelin-rated and high-end European restaurants before envisioning a way to bring fine-dining quality to everyday accessibility.

From that vision, Pasta di Guy was born as a fast casual Italian concept. What began as a single food truck has grown into a multi-unit franchise with brick-and-mortar locations in Florida and Indiana, with Virginia and additional Florida markets launching in 2026.

As founder and chef, Guy oversees recipe development, brand integrity, and franchise growth, ensuring consistency and quality across every location. Pasta di Guy is committed to supporting franchisee success and long-term profitability. The mission is clear: to become the number one choice for American families seeking Italian cuisine—so that when someone thinks, “I want pasta,” the next thought is,

“I want to go to Pasta di Guy.”
